Betty Crocker’s Got Nothing On Me

Two weeks of being really serious about meal planning and budgeting have gotten me into a place where I’m comfortable trying to take my meal planning to the next level: healthy meal planning.

Tonight, I made this:  ham with sweet potatoes and carrots. Thanks, Roni!

It was delicious, inexpensive and so, so easy.  I’m looking forward to making more healthy meals like this for the family. I think they are already kind of shocked that I’ve actually cooked meals nearly every night for two weeks.

    I made it even simpler. I used a “hickory smoked” ham, so it already had some flavor, and only combined molasses, balsamic and honey with water for the glaze. Easy, and plenty flavorful enough without having to deal with the cloves and allspice.
